Happy/Healthy -New Year!
Dr. Furman recommends the following 5 foods be in your diet.- dptv.org.
Greens.
Onions.
Mushrooms.
Beans.
Seeds.

"Bean Soup" 1959 Farm Journal Cookbook - (A graduation gift)
2 Cups dried beans, ( Any type-I like Navy)
Wash beans, add 6 cups cold water and boil 2 minutes. Remove from heat and let stand 1 hour.
( or overnight with a little baking soda)
Simmer beans without draining until tender, about 2 hours, adding more water if necessary.
1 ham bone or 11/2 lb. ham butt - water to cover. Simmer. Let cool. Skim fat from the top. Add tender beans.
Add apx. 1/2 Cup chopped onion, apx. 1 Cup chopped celery with leaves, 1 qt. Tomatoes-(home
canned-best), 3/4 Cup diced potatoes, (If no one is diabetic), diced carrots, 1tsp. apx salt, 1/8 tsp -apx. black pepper.
Simmer apx. 20 minutes . Makes 10 servings. Served with corn muffins- for a perfect protein.
Saute'd mushrooms: Clean and peel pink- under-sided button caps and stems; Saute in fresh butter.
Great over steak or multi-grained buttered toast. Also good flavor for gravies.
Onions in almost all meat dishes and bottom of Turkey Roasting pan -for better tasting gravy.
Seeds: Flax seed in your oatmeal and other hot morning cereal.
Seeds in your salads - add a healthy-crunchy touch. (Any type)
P.S. The bean soup recipe was used when most Mothers were full time home-makers.
Now with most women working outside the home I would recommend getting handy with the
Chinese wok. Quick and easy. ( My son wokked his way thru college.)
(Regarding woman working- My Dad always said -"If a woman wants to work--Let her."
Health is high trump. When bad health is fate - attitude is still a choice. Keep the faith.
